Try out the plant ones.
Pure soy was too "soyful" for me, but vanilla and chocolate are good. Pure is also good when combined with something sweet.
Many people like oat milk. It's slightly bitter, so I don't drink it by itself.
Almond is good with high protein stuff, though too fatty/starchy alone.
Cashew is rare and mostly fat+starch, but has great texture and unique nutty taste.

They're all good for cooking and coffee.
